So I never said I was going to be healthy...I just said I was going to try and cook more. Eating healthy will be next year's resolution! We are leftover people in our house, so I have determined that all I really need to do is cook a couple of times a week and we have made a serious improvement in NOT eating out.
This week I made pizza one night and it was super easy...a can of pizza dough topped with some sauce, cheese and pepperoni and we were good to go. The easiest thing I have ever made. We made this in college and it is one of Jeff's favorites from when we were dating. Ethan's face pretty much says how we all felt about pizza night...

I also made enchiladas...which made us a ton and lasted us a few nights. I used to make them a lot when we lived in Houston and kind of forgot about them when we moved to Waco...I'm not sure I have ever made them here which means it has been almost 6 years since we have had them...very sad because they are so good. I can't even remember where the recipe came from. Maybe the back of the enchilada sauce can, but I'm not sure. The recipe is below {pictures are not awesome and hopefully I'll get better, but I always think it is more fun to have a few pics with the recipe}.
Beef Enchiladas
1 pound ground beef
3 cans enchilada sauce {we used medium}
2-3 cups grated cheese
1 can diced green chilies {not sure of the size, but it's a small can}
corn tortillas
Preheat oven to 350 degrees. Brown the ground beef. I had a little more than 1 pound...more like 1 1/4 pounds.
After browning the meat remove from heat and add 1 can of enchilada sauce, can of green chilies, and 1 cup of cheese {I added a little more cheese since I had some extra meat}. Stir until all are mixed together.
Heat your tortillas 3-4 at a time in the microwave for about 30 seconds...this will make it so much easier to roll them and not have them break. The first one I did without warming it up and I had sauce and meat all over my hands.
Place a little bit of sauce {about a spoon full} on a tortilla and add the meat mixture to the middle. Roll and place seam side down in a lightly greased baking dish.
Pour remaining enchilada sauce over the enchiladas and top with remaining cheese {as much or as little as you like...I like a lot and Jeff likes less, so next time his will all be in one pan and mine will be in the other}.
* You will definitely not use all three cans of sauce, I just buy three because I always seem to need a little more than two.
Bake in the oven for about 20 minutes or until the cheese is all melted and bubbly.
Add some rice and beans...eat and enjoy!
