PIZZA AND ENCHILADAS

So I never said I was going to be healthy...I just said I was going to try and cook more.  Eating healthy will be next year's resolution!  We are leftover people in our house, so I have determined that all I really need to do is cook a couple of times a week and we have made a serious improvement in NOT eating out.

This week I made pizza one night and it was super easy...a can of pizza dough topped with some sauce, cheese and pepperoni and we were good to go.  The easiest thing I have ever made.  We made this in college and it is one of Jeff's favorites from when we were dating.  Ethan's face pretty much says how we all felt about pizza night...

Could he be any more excited?!?

I also made enchiladas...which made us a ton and lasted us a few nights.  I used to make them a lot when we lived in Houston and kind of forgot about them when we moved to Waco...I'm not sure I have ever made them here which means it has been almost 6 years since we have had them...very sad because they are so good.  I can't even remember where the recipe came from.  Maybe the back of the enchilada sauce can, but I'm not sure.  The recipe is below {pictures are not awesome and hopefully I'll get better, but I always think it is more fun to have a few pics with the recipe}.

Beef Enchiladas

1 pound ground beef
3 cans enchilada sauce {we used medium}
2-3 cups grated cheese
1 can diced green chilies {not sure of the size, but it's a small can}
corn tortillas

Preheat oven to 350 degrees.  Brown the ground beef.  I had a little more than 1 pound...more like 1 1/4 pounds.

After browning the meat remove from heat and add 1 can of enchilada sauce, can of green chilies, and 1 cup of cheese {I added a little more cheese since I had some extra meat}.  Stir until all are mixed together.

Heat your tortillas 3-4 at a time in the microwave for about 30 seconds...this will make it so much easier to roll them and not have them break.  The first one I did without warming it up and I had sauce and meat all over my hands.

Place a little bit of sauce {about a spoon full} on a tortilla and add the meat mixture to the middle.  Roll and place seam side down in a lightly greased baking dish.

Pour remaining enchilada sauce over the enchiladas and top with remaining cheese {as much or as little as you like...I like a lot and Jeff likes less, so next time his will all be in one pan and mine will be in the other}.

* You will definitely not use all three cans of sauce, I just buy three because I always seem to need a little more than two.

Bake in the oven for about 20 minutes or until the cheese is all melted and bubbly.

Add some rice and beans...eat and enjoy!

I'M A MODEL YOU KNOW WHAT I MEAN...

And I do my little turn on the catwalk.

Yeah on the catwalk, on the catwalk yeah

I do my little turn on the catwalk.

Even though their room is full of many toys with flashing lights and happy songs, the boys absolute favorite thing to do is walk/run/chase each other on the catwalk upstairs.  They could hang out there all day long.  It is literally meltdown city when I put the gate up at their door to keep them in their room.

Sometimes we even crawl with lightening speed when we think brother is right behind us.

And we really like looking down into the family room or at the dogs outside.

All of our bouncy balls usually make it out on the catwalk at some point during playtime...

Evan...having fun with the soccer ball...

until brother takes it away.

He could really care less...

that it has made him this mad!

All is well when we find our mini basketballs.

The catwalk...providing hours of entertainment for both mama and the boys!

{the good part about taking pictures today...fun memories of the boys playing.  the bad part...I now realize just how dirty and dusty my floors really are...at least we had fun, so cleaning will just have to wait until tomorrow...or the next day...or the next day!}

WHY I WILL NEVER SCRAPBOOK AGAIN

Before the boys were born I scrapbooked all of the time, but with teaching and everything else in life I got behind and eventually stopped.  It was something I enjoyed but it became all about the paper and cute embellishments more than the pictures.  I would spend hours on pages and it just took way too long.

Now that the boys are here I really have no time for it even if I wanted to do it.  So...now I put together photo books instead of scrapbooking.  It still takes me some time but it is definitely a project I can handle.  Since I have this blog to record all of our memories {that I plan on also turning into a book} my photo books are mainly just pictures.

Ethan and Evan's Year One Book

I did my book through Blurb and I absolutely LOVE how it turned out.  The best thing about Blurb is that you can have up to 440 pages {sounds like a lot but I ended up with 398} and you can edit your layout to look however you want.  I had full control over how each and every page turned out.

I can't tell you how many times I have sat and looked through this book and I love that the boys have it to look at when they get older.

398 pages of memories...

almost 1000 pictures...

getting to relive our first year...

over and over again...

PRICELESS!!

THE ART OF SCROUNGING

A few pictures of Brinkley's daily search for any leftover food in the boys' highchairs {he definitely has it all figured out}...

Hmmm...I think I smell something...

Yes...there is definitely something there...

Got it!

And {totally random}...does anyone else with dogs or other animals talk to them as if they were people? I caught myself doing this yesterday and just had to laugh...I think I am losing my marbles on most days, but then at times I think they totally understand what I am saying.  Usually it involves Sawyer and me trying to get him to come inside.  Yesterday I told him to come in because I was going upstairs and wasn't coming back down to let him in.  I actually explained to him that he was going to get cold and it would be his own fault if he didn't come right then...totally crazy right?  Who actually talks to their dog like that.  Even crazier...he came running inside as fast as he could after my great speech.  Ha!

I'm not doing a whole post dedicated to what I cooked this week...just adding it to what is now the most random post ever...I made a BBQ Chicken Braid for dinner and it was pretty good.  The original recipe uses a homemade roll recipe for the bread, which I should have done.  I used two cans of crescent rolls because I didn't have the time to do it homemade but I think if I made it again I would do it all homemade...it looks so much better on the blog where I found the recipe.  If you want the recipe you can go here...

Happy Friday!
{We are going to get the boys' second half of their flu shot today...not a very happy Friday in the Burchfield house}

THURSDAY THOUGHTS

Being a kid is the greatest...I have come to this conclusion lately.  You get to play ALL OF THE TIME, your parents take care of you, feed you, wash your clothes, take you places...your greatest worry is what toy to pick to play with.

My kiddos live in a world where cars with faces hang out with barnyard animals...

And really...does it get any better than trains, cars and trucks with happy smiley faces?

We build tents...not the best I have ever made but the boys LOVED it!

They carry around their blankies...

...and make silly faces...being a kid is just plain fun!

It makes me wonder why we are in such a hurry to grow up.  My whole life I was always looking one step ahead.  Maybe it had something to do with the fact that I went to school on the same campus K-12 and could see all of the older kids on a daily basis.  In elementary school I just couldn't wait to be in middle school...in middle school I saw the "cool" high school kids from afar and thought I would never get there...in high school I couldn't wait for college.  I loved being at Baylor but at times I thought how awesome it would be when I graduated and was out on my own...to get married and have kids.

And then I had Ethan and Evan and all of a sudden I want time to slow down.  I want life to just stay as it is right now.  I know life is so very short and there is absolutely nothing I can do to make the boys stay the age they are now {we are on our way to two...how is that even possible!?!}.

So...I am enjoying every moment...

the playtime...

the smiles...

the tears...

even moments when the dogs have tried my every patience.

I am cherishing every single day just watching my kids be kids.

NOT SO FOODIE FRIDAY

So the whole cooking thing didn't work out this week as awesome as I thought it would.  I tried a homemade spaghetti sauce recipe and our house did not love it.  I usually just cook some ground beef, add a jar of Prego and that's about the extent of our spaghetti.  Jeff really likes it this way but I have always wanted to try a non-jar recipe.  The one we tried came from myrecipes and it was originally from Southern Living.  It had 5 stars, not a single bad review, and it was "test-kitchen" guaranteed {whatever that means}.  It should have been good right?  It was so the opposite and I was very disappointed.

I am certainly not sharing that recipe here, but since it is "Foodie Friday" I am going to share my favorite toffee recipe.  This is super easy and SO SO YUMMY!  Since I didn't actually make it this week I don't have any pictures but you'll just have to trust me that it looks as good as it tastes.

Toffee

1 cup sugar
1 cup sliced almonds {not slivered}
1 cup butter
3 Hershey bars {milk or dark, whatever you like}
1 cup chopped pecans

Place sugar, almonds, and butter in pan.  Mix and stir over high heat for approximately 6-8 minutes or until mixture becomes golden brown.  Pour onto cookie sheet, spread thin with a wooden spoon.  Break Hershey bars into squares and set on top of toffee.  When chocolate is shiny, spread to cover the toffee.  Sprinkle with chopped pecans.  Allow toffee to sit over night.  Break into pieces.  Eat and Enjoy!!  I dare you to not eat all of this in just one sitting...it is that good!

And...because a post is not a post without a picture...here is one of my little cutie drinking his milk.  Oh how he LOVES his milk.  When he is finished I usually catch him going after Evan's.

Happy Weekend!

ALLIE TURNS SIX

So...if you read my blog you probably have read a few times {or maybe 100} about our friends Cathy and Trey and their little ones Allie and Emmie.  With no family in Waco they have become our family.  I couldn't imagine living life without them.  I get my "girl fix" when we hang out since I live in a house with all boys...love their two as if they were my own.

Allie turned six last Thursday...so grown up, do all kids have to grow so fast?!?  Her party was this past weekend but we also helped celebrate with them last Thursday night.

Getting ready to blow out her #6 candle...can you tell she is just a little excited?!?

With her mama.

Our two always make themselves right at home, playing with all the toys and getting into cabinets...we are a good baby proofing trial run for Cathy and Trey who are expecting another little one in July.  We are SO SO excited!

Love this pic...Allie proudly showing off her new Barbie furniture while the other three carefully check it all out.

Who needs toys when you can climb on a box?

Our newest discovery of the night...fire...

Evan...very tentative.  Close enough to check it out but far enough away to be safe.

And then there was Ethan...Mr. Fearless had to get as close as possible to check it all out.

It was a fun night getting to celebrate Allie and the blessing that she is to all of us!
