This is another super easy {and super yummy} crock pot recipe. I have been making this forever...I can't even remember if I got it from somewhere or if I just threw a bunch of stuff together myself. We like spicy foods in our house and this one definitely has some kick. If you don't want it as spicy you can use mild rotel and less of the seasoning.
Red Beans and Rice
1 {1 lb.} bag of red beans
2 packages of beef smoked sausage
2 cans rotel
1 1/2 Tbsp Tony Chachere's seasoning
Instant rice
Soak your beans over night. Rinse and place beans in the crock pot. Slice the sausage into pieces {I also cut the slices in half...sort of half circles. You can see in the pic above} and add to the crock pot along with the rotel and seasoning. Stir to mix everything together and cook on low for about 6 hours.
Spoon over some white rice and enjoy!
