SNOW AND STEW


I always say I'm going to believe it when I see it in anything related to snow...you just never know in central Texas what you are going to get.  Most of the time I feel like it is never as much or as bad as the weather people say it is going to be.  The only thing we are ever guaranteed is miserably hot summers.

Yesterday I was most definitely not disappointed.  With an incredibly cold week of weather never getting above freezing, it set the stage for some beautiful snow to wake up to.

Looking down our street...my favorite part was that the snow stuck to the streets too {never happens}.  The streets are always too warm and it always melts...love that we had an extra cold week and had "cold streets."

The cold weather put me in a crazy soup mood, which is what we ate all week long.  I made stew in the crock pot on Thursday night and IT WAS AWESOME!  There is nothing better than a yummy meal that requires very little effort to make.


Crock Pot Stew

stew meat
{I buy the meat that is already cut into pieces...I probably had about 1 1/2 pounds}
1/3 cup flour
1/2 tsp salt
1/2 tsp pepper
2 cloves minced garlic
2 bay leaves
1 tsp paprika
1 Tbsp Worcestershire sauce
5-6 potatoes, peeled and cut into cubes
6-7 carrots, peeled and cut into pieces
1 onion chopped
2 cans beef broth

Combine the salt, pepper and flour and coat the meat.  I think the original recipe says to brown the meat first before putting it in the crock pot, but I didn't have time so I just threw it in un-browned with everything else and it was fine.  Add all ingredients to the crock pot and cook on low for 8 hours {since I started late, I cooked mine on high for about 5 hours).  I really like green beans in my stew and had an extra can in the pantry so I also threw that in during the last hour of cooking.  It really is the easiest meal ever...I don't think it could be messed up at all.
